For Christmas, 2007, we gave each other a pasta maker. |

Ingredients: |
1 lb. (4 cups) Flour
5 eggs, room temperature

Procedures: |
Pour the flour into a large mixing bowl.
Pour the eggs into the middle of the flour (Fig.2).
Mix the eggs with a fork until they are completely blended with the flour.
Knead the mixture with your hands until it is completely homogenous and consistent (Fig. 3). If the mixture is too dry, add some water, if too soft, add some flour.
A good mixture should not stick to your fingers.
Remove the mixture from the bowl and place it onto a lightly floured surface (Fig. 4).
If necessary, continue to knead the mixture and cut it into small pieces (Fig. 5).
Set the machine to position #1 (Fig. 6) and pass chunks of the mixture through the machine (Fig. 7).
Fold and repeat the process until the pieces begin to take a regular shape, trimming if necessary (Fig. 8).
Advance the position knob and repeat the process, making one pass per position number, trimming if necessary (Fig. 9).
Lasagna noodles have now been produced.
To cut the pasta, mount the cutter and attach the handle. Pass the pasta through the appropriate cutter (Fig. 10 and 11).
