PASTA-ARTICHOKE SALAD 2013-08-22
Ingredients:
1 pound Sugar Snap Peas
1 cup edamame, thawed
1 cup cherry tomatoes, halved
1 sm. can sliced black olives, drained
Fresh Parmesan cheese
Ken's Lite Sweet Vidalia Onion Dressing.
2 tablespoons Balsamic Vinegar
1 20 oz. package refrigerated cheese tortellini
1/4 c minced red onion
15 oz artichokes, chopped and drained
Procedures:
Cook tortellini as package directs & drain.
Blanch the sugar snap peas, tender/crisp, drain and trim
Assemble all and toss with dressing. Top with cheese.
Notes:
2023-01-03: For lunch during the Payne’s visit.
2022-08-28: A batch for a dinner with SKDL. We ate on it all week.
2019-09-10: A batch for Kate’s Bechemal Day; no snow peas.
2018-07-07: Made for SKDL, the peas were omitted.
2014-06-12: a batch was made for a visit from SKDL and served with Chicken Enchiladas.
