SOUTHWESTERN LAYERED SALAD  
 
Ingredients:
1/3 Cup Cilantro, chopped fresh
1/2 Cup Lime juice
1/2 Cup Olive oil
1/2 Cup Sour cream
1 teaspoon Sugar
1/2 teaspoon Salt
1/2 teaspoon Pepper
16 oz. package Romaine lettuce, shredded
5 Plum Tomatoes, chopped
15 oz. can Black beans, rinsed and drained
1 Purple onion, small, chopped
8 oz. Mexican 4-cheese blend, shredded
15 oz. can whole kernel corn with red and green peppers, drained
6 oz. Sliced ripe olives, drained
2 Cups Tortilla chips, crushed
Procedures:
Process the first 7 ingredients in a blender or food processor until smooth, stopping to scrape down sides.
Layer the lettuce and remaining 7 ingredients in a 3-quart glass bowl.
Pour the dressing over the salad just before serving, and gently toss.
Serve immediately.
Notes:
2020-08-07: This worked very well and makes a lot. We made the dressing and held it in reserve until added two each individual bowl. The lime was too strong and too many olives.
