SPINACH SALAD  
Ingredients:
1 10oz packages of fresh spinach.
2-3 hard boiled eggs
Candied Walnuts
Mushrooms
Procedures:
Wash, rinse and drain the spinach.
Tear into bite-sized pieces
Cook and slice the eggs. Slice the mushrooms. Serve chilled.
Notes:
2024-10-01: Made form Charlene’s visit as a side with the bourbon-glazed salmon. The remainder went to the patio for the ground hog and rabbits.
2024-04-20: Served with Parmesan Tilapia.
2023-07-05: With seafood crepes for Charlene’s visit.
2023-04-14: We made a batch to serve with Coquille St. Jacque. The remainder of the spinach went out for the bunnies, but they didn’t like it.
2008-10-21: Added to our cookbook.
