SAUSAGE AND CHEESE CALZONES  
 
Ingredients:
1 pound mild or spicy Italian sausage, casings removed
1 medium onion, halved and sliced
1 large yellow or red bell pepper, sliced
15 oz. low-fat ricotta cheese
1 eggs
1.5 teaspoon salt-free herb-and-spice seasoning
2 (13.8 oz) cans refrigerated pizza dough
1/2 cup pizza sauce
8 oz. shredded Italian six-cheese blend, divided
Procedures:
  1. Preheat oven to 425o. Sauté first three ingredients 10 minutes or until meat crumbles.
  2. Remove from skillet and drain
  3. Stir together ricotta, eggs and seasoning.
  4. Unroll one can of dough on a lightly greased baking sheet, stretching into a 10 x 13 rectangle.
  5. Spoon 1/2 cup pizza sauce, 1 cup ricotta mixture and half the sausage mix on half the rectangle, leaving a 1" border.
  6. Sprinkle with 1 cup cheese.
  7. Moisten edges with water, fold over and crimp. Cut 3 1" slits to allow steam to escape.
  8. Repeat with the other can of dough.
  9. Bake for about 25 minutes or until golden.
  10. Serve with additional pizza sauce.
