Bechamel Sauce
This is a critical part of Lyd's Lasagna, and Canneloni Al Funghi.
Ingredients:
FULL:
9 Tablespoons Unsalted Butter
3/4 cup Flour
4.5 cups 1/2 & 1/2 [or Milk]
1 teaspoon Salt
1 teaspoon Nutmeg, freshly grated
1/4 teaspoon cayenne
HALF:
4.5 Tablespoons Unsalted Butter
3/8 cup Flour
2.25 cups 1/2 & 1/2 [or Milk]
1/2 teaspoon Salt
1/2 teaspoon Nutmeg, freshly grated
Dash teaspoon cayenne
Procedures:
In a 2 qt sauce pan melt the butter.
When the butter begins to froth, add the flour.
Mix well with a whisk. Cook over medium heat, whisking constantly until lightly golden.
Add milk, salt, and nutmeg.
Cook over low heat, stirring constantly until thick and creamy, about 5 minutes.
