KATE'S RED SAUCE  
2010-09-18: We acquired this recipe while in Wyomissing for a birthday weekend.
Ingredients:
1.5 lbs stew meat
1 large red onion, thinly sliced
1 large yellow onion, thinly sliced
2 tablespoons garlic
1 cup red wine
4 cups beef stock
4 cups water
2 29oz cans tomato puree
12 oz tomato paste
2 teaspoons salt
2 tablespoons basil
1/2 teaspoon pepper
1/2 cup grated parmesan
3 bay leaves
Procedures:
Sauté sliced onion and garlic in EVOO. Remove and puree.
Sauté the sew meat in EVOO until cooked through.
Return pureed onions to the pan and add wine.
Reduce
Add all remaining ingredients and simmer 2-3 hours.
Remove stew meat.
