Gazpacho
Ingredients:
1 sweet onion, chopped
1 small green pepper, chopped
3 Large Tomatoes, peeled and seeded
1 English Cucumber, peeled
1 Zucchini, peeled
1 Yellow squash, peeled
1 Tablespoon minced garlic
3 Tablespoons EVOO
1 teaspoon sugar
3/4 teaspoon salt
1/2 teaspoon Tabasco
1/2 teaspoon Balsamic Vinegar
1/4 teaspoon Cayenne pepper flakes
6 cups tomato juice
Procedures:
Clean and chop all the vegetables.
Puree in the food processor or blender, in batches, until all are smooth and combine.
Add the seasonings and tomato juice.
Cover and chill.
Notes:
2024-09-04: Another good batch, with 3 quarts to the freezer.
2023-06-25: 4 quarts to the freezer.
2022-05-05: A good batch for the freezer.
2012-06-13: The onion was too strong; a Vidalia is needed.
2010-06-19: Added to our cookbook.
