Lentil Soup |

Ingredients: |
1 lb. Lentils, rinsed and inspected
3 Carrots
2 Onions
3 ribs Celery
1 T Butter
1 T Tomato Paste

1 lb beef short ribs
1 qt chicken stock
1 qt beef stock
1 Bay Leaf
Pinch Thyme

Procedures: |
Brown the short ribs and set aside
Dice the carrots, onions and celery.
Sauté the veggies in butter, with S&P to taste.
Add the lentils, short ribs, broth, bay leaf and tomato paste.
Bring to a boil and simmer for about an hour.

Notes: |
2021-10-07: We used bone-in short ribs, with a dash of cayenne pepper a dash of garlic powder and 1/2 teaspoon of sugar. No celery.
2021-01-05: We replaced the short ribs with 2.5 sweet sausages. Four quarts to the freezer.
2018-11-25: We changed the Previous Version. Served for dinner with 3 quarts to the freezer. The short ribs need to cut up.
