BLACK BEAN SOUP  
We combined several different recipes to make this one. It will be modified.
Ingredients:
1 pound dried black beans
3 tablespoons butter
3 tablespoons EVOO
2 cups chopped onion
1 cup diced celery
2 jalapeño peppers, diced
1 small red pepper, diced
1 small green pepper, diced
2 tablespoons minced garlic
1 bay leaf
1.5 oz salt pork fat
2 teaspoons ground cumin
S&P
1/2 teaspoon cayenne pepper
1/2 teaspoon thyme
pinch of cilantro
2 tablespoons dried parsley
Brown sugar
5-8 cups beef broth
2 tablespoons fresh lime juice (2 limes)
1/3 cup rum
tortilla chips (optional)
Procedures:
  • ___Pick over, rinse and soak the beans overnight in enough water to cover.
  • ___Rinse and drain the beans.
  • ___In a saucepan, heat the butter and olive oil. Sauté the onion, celery and all the peppers until tender.
  • ___Add the garlic to the veggies and saute about 2 minutes.
  • ___Combine the veggies and beans in a stockpot.
  • ___Add the bay leaf, pork fat, cumin, S&P, cayenne pepper, thyme, cilantro, parsley and brown sugar.
  • ___Add the beef broth to cover the beans/veggies, stir, raise to a boil, reduce heat and simmer for about 3 hours.
  • ___Take 2 cups of the mixture and puree in the food processor until smooth and then return to the stockpot.
  • ___Stir in the lime juice and rum and season to taste.
  • Garnish with any or all of: sour cream, diced raw onion, avocado slices, grated cheese.
  • Serve with tortilla chips (optional)
