SMOKED SALMON CREAM SOUP |

|
Ingredients: |
1 T butter
1 diced carrot
1 diced celery stalk
1 med onion diced
1 T minced garlic
1 c wt wine
1/2 t Liquid Smoke
|
1 can red salmon
6 cups heavy cream
2 cups "Mobster Sauce"
1/2 t old bay
1 t chopped dill
1 bay leaf

Procedures: |
Sauté veggies till tender.
Deglaze pan with wine.
On low heat, add salmon, cream, and mobster sauce.
Stir. Do NOT boil.
Add old bay, dill, thyme and bay leaf and liquid smoke.
Cover and simmer 1 hour.
Cool. Purée in batches. Strain if desired. Serve hot or cold.
NOTE: "Mobster Sauce" (Big Bang Theory) is made from Better-Than-Boullion Lobster

2023-08-06: We used the electric fry pan and simmered for 20 minutes.
2018-01-19: a batch made with lobster stock.
2013-01-26: We made our 1st batch with $28 of smoked salmon, with half frozen for the next Ferrarello visit.
