STRAWBERRY RHUBARB SOUP |

Ingredients: |
1 pint strawberries
1 pound rhubarb
1.25 cups orange juice
~ 1/2 cup sugar
1/4 cup orange sections
|

Procedures: |
1. Slice strawberries, setting aside 4 slices
2. Trim rhubarb and cut into bite size chunks
3. Boil fruit and OJ and simmer 10 minutes.
4. Remove pan from heat and stir in sugar to taste.
5. Purée in the food processor.
6. Containerized and fold in orange sections.
7. Serve in chilled bowls and top with strawberry slice.
