Split Pea Soup |

Ingredients: |
2 qts Chicken stock
1 cup Beef stock
1 bag dried peas
1 onion, chopped
3 Carrots, sliced
3 sticks celery, chopped

1 bay leaf
1 Tablespoon minced garlic
1/4 teaspoon thyme
1 teaspoon cayenne pepper
1 teaspoon sugar
Salt and Pepper

Procedures: |
Saute the onions in the oil until tender.
Add carrots and saute ~5 minutes.
Add the garlic, S&P, bay leaves and Saute an additional 5 minutes.
Add peas and chicken broth.
Cook ~ 2 hours until peas are done.

2024-02-11: A little for lunch and the rest to the freezer.
2023-06-10: The salt pork was deleted and an available shallot added.

2019-12-28: We added a large ham bone,’Cause we had one; no bacon or salt pork cubes or chicken stock or sugar.
