Vegetable Beef Soup |

Ingredients: |
2 Beef Short Ribs
2 cups Beef Broth
10.5 oz. Tomatoes, Sliced
1 Medium Onion, Chopped
1 clove Garlic

1 box Mixed Veggies
1/4 head green cabbage
Red Skin Potato
Salt and Pepper
|
|
Procedures: |
Brown the short ribs.
Add the onion, tomatoes, garlic clove, potato and beef stock.
Simmer for 2-3 hours.
Add the mixed veggies, and cabbage.
Simmer 15 minutes.
Season to taste and serve.

Notes: |
2023-08-20: We cleaned out a load of stuff from the freezer to make a very full batch.
2023-01-25: 3 quarts to the freezer.
2021-03-15: Using a variety of frozen stocks in the freezer, we made 4 quarts back to the freezer.
2021-01-23: We used tenderloin tips, 1/2 lb of mixed veggies, with corn,leeks, bean stock, squash stock and Yukon gold potatoes. Orzo was added. No cabbage, but a bit of slaw mix.
