PEPPER RELISH

Ingredients: |
1 doz. Green peppers
1 doz. Red peppers
An equal amount of peeled onions
1 pint white vinegar
2 Cup white sugar
1 Cup brown sugar
1 oz. Celery seed
1 oz. Mustard seed

Procedures: |
Wash and cut into strips: peppers and onions
Process in small batches till diced. We used to grind everything in a meat grinder.
Put in large pot. Sprinkle with 3T salt. Cover with boiling water. Let stand 15 min. Drain.
Put vinegar, sugar and spices in a large kettle.
Add the drained pepper/onion mixture and boil 40 min.
Cool and freeze in Ziploc containers or bags.
