CHEESE STRAWS
Ingredients:
1 stickbutter at room temperature
1 lbSharp Cheddar, shredded
1.5 cupsFlour
1 tSalt
1/4 tCayenne Pepper
Procedures:
Preheat oven to 300o
In a mixing bowl, cream the butter until light and fluffy.
Add the cheese and mix until blended.
Add the flour, salt, and red pepper, and mix to form a dough.
Refrigerate for 30 minutes to firm up the dough.
Roll the dough into thin tubes, about 2" long onto a lightly greased cookie sheet.
Bake for 10 to 15 minutes or until lightly browned.
Remove to racks to cool.
Notes:
2008-10-06: The soft butter was much better. 300o at even 17 minutes was not enough, but 400o for 20 minutes was too much. They might needing frying to crisp them up.
2007-11-20: This first time was not great. We tried to work with cold butter. Next time we will roll the dough to pencil thickness, hoping for a crisper product.
