Fleming Butter
This two-step spread from Fleming's Prime Steakhouse was given to us in July, 2021. This is step 2, preceded by Red Onion Confit, and finishes the recipe.
They call it Cabernet Red Onion Spread. We call it Fleming Butter
Ingredients:
1.5 lbs Butter
3 lbs Cream Cheese
1.5 lbs Red Onion Confit
1 cup Red Wine
Procedures:
1. Place Butter and Cream Cheese into the mixer with the paddle attachment.
2. Mix on #2 speed for 4-5 minutes until smooth.
3. Add remaining ingredients, mix on #2 speed for 5-7 minutes.
4. Scrape down the sides of the bowl and blend for additional 3 minutes to ensure ingredients are incorporated evenly.
5. PLace into a container.
6. Cover, label, refrigerate.
Notes:
2021-08-02: Using all of the confit, this results in 2/3 of a batch, so the rest of the ingredients were reduced, appropriately. We filled 4-4x3 muffin tins and sent them to the garage freezer; one pint more to the fridge.
