Cocktail Meatballs
Ingredients:
1/2 cup bread crumbs
1/2 onion, minced
1/4 cup milk
1 Tablespoon parsley
1 teaspoon salt
1 Tablespoon Garlic, minced
1/8 teaspoon pepper
1/2 teaspoon Worcestershire sauce
1 lb. ground beef
12 oz. Chili Sauce
10 oz. red pepper or spicy Grape Jelly
Lemon Juice
Procedures:
Mix the 1st nine ingredients.
Fold in the ground beef and shape into balls.
Bake in sheet pans at 350o for 15 minutes.
In a skillet, heat remaining ingredients; add meat balls and simmer 30 minutes.
Notes:
2022-10-15: A batch was made for Sunday afternoon movies with SKDL.
2020-11-08: 85 meatballs for a football Sunday.
2019-11-22: Made for Sal’s birthday party. The meatballs were baked in sheet pans at 350 for 15 minutes. The sauce was made separately in a skillet, and then combined. There was a double quantity of the meatballs and 1 1/2 quantities of the sauce. All made a day ahead to be reheated.
2019-08-17: a batch made for Bill’s visit
2016-08-06: Brown the meat first in olive oil. Add one half jar of the red pepper jelly and all of the chili sauce. Chill and skim off oil then freeze. Half jar of the red pepper jelly still too sweet.
