Pickled Shrimp 2012-05-14
Ingredients:
1/2c olive oil, divided
2 onions, chopped finely
3 garlic cloves, minced
2 lbs raw shrimp. Peeled and cleaned
1 red onion, thinly sliced in crescents
1/2 c white vinegar
1t salt
1/4 t pepper
1/4t mustard powder
1/4 t red pepper flakes
Procedures:
1 day ahead, heat 1/4 c oil over med heat.
Add chopped onions and sauté til tender.
Add garlic and shrimp.
Cook till done. Stir frequently.
In large bowl, combine rest of oil and all spices. Add shrimp mixture. Toss.
Refrigerate overnight. Serve chilled.
Cocktail sauce is nice, too.
Notes:
2021-05-21: We made this for SKDL movie Sunday. We used 1 pound of shrimp and, this time, it really didn’t work.
2012-05-15: This was excellent, though we only used 1 lb of shrimp, not 2. We didn't have a chili pepper, so Lyd substituted 1/4 t Red Pepper Flakes for the whole chili pepper.
