APPLE-ONION SOUP

Ingredients:
2T butter
2 lg. sweet onions, thinly sliced
1 T minced garlic
1 bay leaf
2 apples peeled and cut into 1/4 in. Slices. Use Gala or Honeycrisp
6 c ch. broth
1/2 c apple cider
1 med russet potato peeled and cut into 1/4 in. Slices
1/2 c heavy cream
1T lemon juice
2t salt
1t pepper
Procedures:
Melt butter in large Dutch oven. Sauté onions, garlic and bay leaf 30 min. Til onions are caramel colored. Add apples. Cook 5 min. Add broth, cider and potato. Cook 25 min. Let stand 15 min. Discard bay leaf. Process with immersion blender til smooth. Add cream and lemon juice. Season to taste. Serve with cheese slices and crackers.
