Avocado Gazpacho Soup |

| Ingredients: |
1 c sour cream
1/2 c milk
1 c tomato juice
1 c tomato sauce
1 T olive oil
1 T minced garlic
1 bay leaf

1 cucumber, seeded peeled, minced
1 tomato,peeled, seeded, diced
S & P
Tabasco
2 avocados
1 T lemon juice
Garnish: Minced cucumber,tomato,green pepper

| Procedures: |
Beat sour cream well. Beat in milk, and next 4 ingredients. Add bay leaf cucumber and tomatoes. Season. Chill.
Remove bay leaf.
Mash avocados and lemon juice.
Blend into tomato mixture.
Pour into bowls. Add garnish.

2018-06-04: This didn’t work very well and was closer to a dip than a soup. Perhaps we’ll thicken it and move it; probably not!
