Peanut Noodle Salad |

Ingredients: |
2 large cucumbers
3/4 cup Soy Sauce
1/2 cup Coconut Milk
1/2 cup Rice Wine Vinegar
1/2 cup Chunky Peanut Butter
4 Garlic cloves, minced

1 teaspoon sesame oil
1 teaspoon crushed red pepper
1/2 teaspoon salt
16 oz angel hair pasta, cooked
10 oz shredded carrots
6 scallions cut into 1 1/2" pieces

Procedures: |
1. Peel cucumbers; cut in half lengthwise, discarding seeds.
Cut cucumber halves into crescent-shaped slices.
2. Whisk together soy sauce and next 7 ingredients in a large bowl; add sliced cucumbers, pasta, carrots, and green onions, tossing to coat.
Cover and chill 8 hours, if desired.
