ZUCCHINI MUSHROOM SALAD |

Ingredients: |
8 oz mushrooms
1/3 cup olive oil
2 T fresh lemon juice
1/2 shallot, minced
1/2 t salt
1/2 t ground pepper

2 small zucchini
3 T thinly sliced chives
3 T fresh basil, chopped
1/2 cup pecans, toasted and salted
Freshly grated Parm

Procedures: |
Cut stems from mushrooms. Slice tops into strips.
Whisk olive oil and next 4 ingredients in large bowl. Stir in mushrooms. Let stand 10 min.
Cut zucchini into 1/8 in. Slices. Stack and cut into strips resembling linguini.
Toss all together. Let stand 20 minutes. Sprinkle with Parm cheese. Serve.
