Spicy Black Eyed Peas
To be eaten on New Year's Day --- for luck!
4 slices bacon
1 medium onion, chopped
1 (16-ounce) package dried black-eyed peas, washed
1 (12-ounce) can diced tomatoes and green chilies [Rotel]
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Adobo powder
32 ounces Chicken Stock
In a large saucepan, cook the bacon until crisp. Drain the bacon, crumble, and set aside to use as a topping.
Sauté the onion in the bacon drippings until tender.
Add the peas, diced tomatoes and green chilies, salt, pepper, Adobo and chicken stock. Cover and cook over medium heat for 45-60 minutes, or until the peas are tender, adding additional water, if necessary.
Serve garnished with crumbled bacon.
2019-01-01: We only used 1/2 can of the Rotel tomatoes and a pinch of sugar; excellent
2017-12-30: Made for New Years Day, for luck!
2011-12-31: A batch was made for New Year's 2012.
