Spicy Black Eyed Peas |

To be eaten on New Year's Day --- for luck! |

Ingredients: |
4 slices bacon
1 medium onion, chopped
1 (16-ounce) package dried black-eyed peas, washed
1/2 (12-ounce) can diced tomatoes and green chilies [Rotel]
|
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Adobo powder
32 ounces Chicken Stock

Procedures: |
In a large saucepan, cook the bacon until well done, short of crisp. Drain the bacon, chop, and set aside.
Sauté the onion in the bacon drippings until tender.
Add the peas, diced tomatoes and green chilies, salt, pepper, Adobo and chicken stock. Cover and cook over medium heat for 45-60 minutes, or until the peas are tender, adding the bacon and additional water, if necessary.
Serve garnished with crumbled bacon.

Notes: |
2024-01-01: The traditional New Year’s Day favorite, with more to the freezer.
2022-01-01: With no dried peas in the market, we used 2 cans of Goya black-eyed peas on New Year’s morning.
2020-12-05: a good batch with some to the freezer for New Years Day.
