CORN PUDDING
Ingredients:
1/4 Cup Sugar
1.5 T Flour
1 t Baking Powder
3 Eggs
1 Cup Whipping Cream
1/4 Stick Butter
3 Cups Fresh Corn (frozen, thawed and drained is also good.)
1.5 t Salt
Procedures:
Preheat the oven to 350o.
Combine the 1st 3 ingredients.
Whisk together the eggs, cream and butter.
Add the sugar mixture.
Whisk till smooth.
Add the corn.
Salt to taste.
Bake 45 minutes; Let stand 5 minutes.
Notes:
2024-11-28: A double quantity went to Exeter for Thanksgiving dinner.
2023-10-06: Made for Bill’s visit.
2023-06-02: Served as a side for Pork Cutlet Cranberry Wine.
2022-06-27: An excellent batch made with 2 pints of fresh corn from the freezer.
2008-11-27: Added to our cookbook.
