CARROT-SWEET POTATO PUREE
This first came from Southern Living Complete Quick and Easy Cookbook: 2009
Ingredients:
4 carrots, sliced
3/4 cup water
1/4 cup butter [1/2 stick]
40 oz canned sweet potatoes, drained
8 oz light sour cream
1 Tablespoon Splenda
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground red pepper
Procedures:
  • ___Microwave carrots and water in a glass bowl on high 8 to 12 minutes or until tender. Drain
  • ___Process carrots and butter in a food processor until mixture is smooth, stopping to scrape down sides. Add sweet potatoes; process until smooth.
  • ___Stir together sweet potato mixture, sour cream, and remaining ingredients.
  • ___Spoon mixture into 1.5 quart glass dish. [Refrigerate until needed] Microwave on high 4-5 minutes or until thoroughly heated.
Note: To make ahead, prepare and stir together ingredients as directed; cover and chill up to 2 days.
Let stand at room temperature 30 minutes; microwave as directed.
