FRIED EGGPLANT

Ingredients: |
1 eggplant
1 cup flour
1 cup Panko1
4 Tablespoons salt
2 eggs
EVOO
|
|
Procedures: |
Peel the eggplant and slice into 1/4" slices. Brine (soak in salted ice water) for an hour or more.
Beat the eggs until frothy.
With paper towels, pat dry the eggplant slices.
Heat enough EVOO to cover in a fry pan or wok.
Dip each slice in the flour, THEN the beaten eggs and THEN the Panko1.
Fry the slices until crisp.
Salt when removed from the pan.

2010-11-20: Served with chicken parmigiana, some of the slices had a little red sauce added. 1Our first attempt was without the Panko on all; just a few. It is a good change.
