EGGPLANT GRATIN
 
Ingredients:
EVOO for frying
1 eggplant, unpeeled, sliced into 1/2" slices
1/4 Cup Ricotta
1 XL Egg
1/4 Cup 1/2 & 1/2
1/2 Cup plus 2 T Freshly grated Parmesan
Kosher Salt and freshly Ground pepper
1/2 bottle Marinara Sauce
Procedures:
Preheat the oven to 400o.
Heat EVOO in a large pan over medium heat.
With the EVOO almost smoking, add several slices of eggplant, turning once, until evenly browned on both sides and cooked through, about 5 mintes.
Transfer the slices to paper towels to drain and continue with remaining slices.
Mix together the ricotta, egg, 1/2 & 1/2 and 1/4 cup of the Parmesan, 1/8 t salt and 1/8 t pepper.
In a baking dish, place a layer of eggplant, covered with a layer of S&P, Parmesan and 1/2 the Marinara Sauce.
Add a second layer of eggplant, S&P and the ricotta mixture.
Sprinkle Parmesan on top and bake for 25-30 minutes or until set and browned.
Notes:
2009-03-29: We found this recipe September in 2007. This was our first attempt and it was excellent. Lyd made it in individual "boats", but we'll change it to a single baking dish.
