GRATIN OF BROCCOLI IN BECHAMEL

Ingredients: |
2.25 pounds fresh broccoli, cut into spears
3 T butter/margarine
3 T flour
2 cups milk
2 T stone-ground mustard
1/8 t salt
1/8 t ground nutmeg
1/8 t pepper
1 cup (4oz) shredded Gruyere cheese

Procedures: |
- ___Arrange brccoli in a steamer basket over boiling water. Cover and steam 10 minutes or untill crisp-tender. Remove from heat. Transfer broccoli to a lightly greased 13x9" baking dish.
- ___Meanwhile, melt butter in a heavy saucepan over medium heat; whisk in flour until smooth. Cook 1 minute, whisking constantly. Gradually whisk in milk; cook over medium heat, whisking constantly, until mixture is thickened and bubbly. Stir in mustard and next 3 ingredients. Pour sauce over brocolli; sprinkle with cheese.
- ___Broil 3" from heat 6 minutes or until lightly browned. Serve immediately.
