MUSHROOM STRUDEL
This could be a veggie; a starter, or a dessert, depending on the setting.
Ingredients:
2 T & 3/4 cup butter
2 T minced onion
1 clove garlic, minced
8 oz mushroom, chopped
3 T white wine
1/4 cup crumbled goat cheese
1 t parsley
1 t fresh chervil
1 t fresh chives, chopped
3 sheets phylo dough, defrosted overnight.
Procedures:
Sauté 2 T butter, onions, and garlic about 3 minutes.
Add the mushrooms and wine and cook 10 minutes.
Cool thoroughly
Add the cheese and herbs and mix to form a paste.
Brush the sheets of phylo with melted butter, brushing between the sheets.
Form the mixture into a cylinder at one end of the dough and roll it into a cylinder.
Cut slits into the top of the cylinder at 1" intervals, cutting 1/3 through the roll.
Bake 15-20 minutes at 400o.
Slice into ~12 pieces.
Notes:
2009-10-11: The first batch showed promise, though everything went wrong:
  • too little mushrooms.
  • no chervil
  • too much dough
  • too little butter
  • no pastry brush
  • cooked at 375o instead of 400o
