ROASTED PEARS WITH BLEU CHEESE
Ingredients:
Canned pear halves
2 Tablespoons lemon juice
3 oz. Sharp bleu cheese, such as Stilton
1/4 Cup Dried Cranberries
1/2 Cup chopped walnuts
1/2 Cup Apple Cider
3 T Port
1/3 Cup Light Brown Sugar, lightly packed
1/4 Cup EVOO
Procedures:
Preheat the oven to 375o.
Toss the pears with lemon juice to prevent browning.
Arrange the pear halves, core side up, in the baking dish.
Toss the bleu cheese, cranberries and walnuts together in a small bowl.
Mound each pear cavity with the mixture.
In the same bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar.
Pour the mixture over and around the pear halves.
Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender.
Whisk together the EVOO, 1/4 cup of lemon juice and 1/4 cup of the basting liquid.
Plate a pear half and drizzle with some of the combined basting liquid.
Notes:
2024-11-05: A side with leftover pasta and sauce, butternut squash, and a bottle of Primitivo.
2023-07-15: A side dish served with Tilapia Parmesan Alfredo.
2020-06-03: We used apple sauce in place of cider and candied cashews in place of the walnuts.
2017-03-15: served with chicken divan.
