Potato Latkes
Ingredients:
2 Baking potatoes, peeled
1 Small Onion
1 Egg
4 teaspoons Flour
1 teaspoon Salt
1/4 cup Canola Oil
Procedures:
Coarsely grate the potatoes on a box grater and cover with cold water.
Coarsely grate the onion and set aside.
Drain the potatoes, squeezing out all the water, and combine with the egg, onion, flour and salt.
Sauté each heaping tablespoon of the mixture 2-3 minutes per side until crisp.
Notes:
2022-01-22: We used Ore Ida shredded potatoes and served them with a leftover pork tenderloin roast.
2021-11-12: With grilled shrimp.
2021-10-10: Made to go with pot roast sandwiches, they need shredded potatoes, not the frozen cubes we used.
2021-03-08: Lyd made a bunch for the boys on the Virtual School day and then more for the two of us the next day with pork schnitzel.
2018-04-06: Served with Pan-seared salmon and glazed carrots.
