HOLIDAY POTATO CASSEROLE
Pre-notes:
   
Ingredients:
3 pounds potatoes, peeled and quartered
1/2 cup butter
6 oz cream cheese, softened
1 cup shredded Cheddar cheese, divided
2 oz diced pimiento
1 green pepper, diced
1 bunch scallions
1/2 cup grated Parmesan cheese
1/4 cup 1/2 n 1/2
1 teaspoon salt
Procedures:
Cook potatoes in boiling water to cover 15 minutes or until tender.
Drain and mash.
Add butter and cream cheese.
Beat at medium speed with an electric mixer until smooth.
Stir in 1/2 cup cheddar and next 6 ingredients.
Spoon into a lightly greased 11" x 7" x 1.5" baking dish. Chill if desired.
Remove casserole form refrigerator and let stand at room temperature for 30 minutes.
Bake at 350o for 40 minutes or until heated.
Sprinkle with remaining 1/2 cup cheddar and bake 5 minutes or until cheese melts.
Notes:
2021-11-19: For Sal’s birthday dinner; with a beef tenderloin. This batch, made with instant mashed potatoes, was a bit wet.
2013-11-28: For Thanksgiving Dinner w/ Margaret, Victor and Elaine.
2013-09-05: For the Laws family visit, Lyd added 1/2 cup Garlic Alfredo Sauce.
2011-12-25: A batch was made for Christmas dinner, but with instant mashed potatoes.
2011-07-03: We're taking this to Wyomissing for Independence Day.
