ONION-GRUYÈRE GRATIN

Ingredients: |
4 medium onions cut into 1/2" slices
3 T whipping cream
1 t flour
1/2 t salt
1/8 t ground nutmeg
1 cup shredded Gruyère cheese

Procedures: |
- Place onion slices in a lightly greased 11 x 7 baking dish. Cover tightly with heavy-duty plastic wrap; fold back a small corner to allow steam to escape. Microwave on high for 10 minutes or just until onion is tender. Drain onion and return to dish
- Whisk together whipping cream and next three ingredients in a small bowl. Pour cream mixture over onions, stirring to coat. Cover and microwave 1 minute; stir. Sprinkle onions with cheese.
- Broil 3" from heat for 5 minute or until cheese is golden. Serve immediately.

Next Time:
We're going to make some significant changes.
We're going to slice the Vidalia onions into 3/4" slabs, then microwave in a single layer to preserve the integrity of the slices and reduce the time to 5-7 minutes and drain.
For the sauce we'll increase the cream to 1/4 cup and the flour to a tablespoon.
Put the onion slabs in a single layer in a baking dish and pour the sauce over the onions.
Make a cheese mixture by combining 1 cup of Panko with 1 cup of shredded Gruyere and 2 Tablespoons EVOO and mixed to be crumbly.
Cover the slices with spoonfuls of the cheese mixture.
Bake at 375o for 20 minutes or until the topping is golden brown
