Squash Casserole |

Ingredients: |
2 lbs fresh squash, yellow or zucchini
1 medium onion, chopped
2 Tablespoons butter
1 can cream of chicken soup
|
1 small container of sour cream
2 carrots, grated
Salt & Pepper
|
|
Procedures: |
Coarsely chop the squash and onion
Cook the squash and onion until very tender
Drain thoroughly
Add all remaining ingredients, stir thoroughly to combine and put in a greased casserole.
Bake at 350o for 40 minutes.

2025-06-02: With only 1 pint of squash, we added a bag of mixedveggies to make a veggie casserole.
2024-10-14: 2 pints of squash & onions made a batch for Bill’s visit.

2022-12-26: Made with 3 quarts of fresh Pennsylvania squash for the Christmas dinner for 9.
