Squash Casserole
 
Ingredients:
2 lbs fresh squash, yellow or zucchini
1 medium onion, chopped
2 Tablespoons butter
1 can cream of chicken soup
1 small container of sour cream
2 carrots, grated
Salt & Pepper
 
Procedures:
Coarsely chop the squash and onion
Cook the squash and onion until very tender
Drain thoroughly
Add all remaining ingredients, stir thoroughly to combine and put in a greased casserole.
Bake at 350o for 40 minutes.

2022-12-26: Made with 3 quarts of fresh Pennsylvania squash for the Christmas dinner for 9.
2021-12-24: Made for Christmas Eve lasagna dinner, we used 2 quarts of golden zucchini and onions from the freezer.
