Stuffed Tomatoes
Feta may be used in place of our in addition to either the Parmesan or the Ricotta
Ingredients:
2 medium tomatoes
One cup Boursin cheese
1/2 cup shredded mozzarella
1/2 cup Parmesan cheese to taste
Salt and pepper to taste
Parmesan cheese to taste
Procedures:
Prepare tomatoes by removing tops and scooping out the inside.
Mix the boursin, mozzarella and parmesan together
Stuff each tomato with the cheese mixture.
Bake at 375o,on a greased pan for 30 minutes or until the tomatoes are tender and the filling is bubbly.
Top with extra Parmesan cheese if desired.
Notes:
2021-12-03: served with seafood newburg.
2020-09-06: This time we added the spinach which was way too much. We will remove it from the recipe and add the mozzarella.
2020-08-30: Excellent! We skipped the spinach and added shredded mozzarella.
