Crepe Cake
Many different fillings can be considered. We're planning, in future editions, orange, lemon, lime, blueberry, & Nutella. Star-shaped for the 4th? Halloween? Christmas Tree? St. Patty's Day?
Ingredients:
Filling
1 2/3 cup heavy cream
3/4 cup powdered sugar, divided
8 oz cream cheese, softened
1/2 teaspoon vanilla
1/8 teaspoon salt
Ganache
1 cup chocolate bits
6 tablespoons heavy cream
Procedures:
Make a batch of Dessert Crepes and set aside.
Put heavy cream and half the sugar in a mixing bowl and mix until stiff peaks appear.
In a separate bowl combine the cream cheese and the remaining sugar, vanilla and salt.
Gently fold the whipped cream into the cheese mixture.
To Assemble: put 1 crepe on a plate; cover with about 3 tablespoons on top and spread around.
Top with another crepe and filling and repeat with remaining crepes, saving 1.
To make the ganache, melt the chocolate, add the cream and stir.
Cool slightly and whisk.
Place the final crepe and pour the ganache over the cake.
Refrigerate (freeze???) until ready to serve and then cut into wedges.

2024-07-21: This first attempt used 9 crepes, but no ganache.
