BEEF AND NOODLES Beef and Noodles
The recipe, from Victor Laws, has been in the family for decades. It's a simple, satisfying, single-dish casserole. The previous version is here.
Ingredients:
1 medium onion, chopped
1 green pepper, chopped
1 lb Lean Ground Beef
1 Tablespoon "Better Than Boullion" Chicken
1/2 t garlic and herb seasoning
1/4 cup red wine
1/2 cup 1/2 & 1/2
1 T ground parm
S and P
1 Tablespoon minced garlic
Dash Cayenne Pepper
Dash sugar
1 can Diced Tomatoes
1-2 Tablespoons, Ketchup
Medium Noodles
Procedures:
Saute the green pepper and onion in EVOO
Add the ground beef and saute with the veggies. Add the diced tomatoes, undrained. Add the "Better Than Boullion" and 1 cup water. Add the uncooked pasta and simmer, Reducing after pasta is done, adding water if needed. Finish pasta. Top with Cream.
Notes:
2023-11-19 : 1/2 box linguini, which was a mistake. We also forgot the cream.
2021-02-10: the pasta was cooked first which should not have happened. Make a day ahead to let flavors blend.
2019-06-17: changed from the previous recipe, with 2 quarts more to the freezer.
