DEEP FRIED CORNISH HENS
Our local market carries fresh 1.75 lb Cornish hens from Perdue poultry. We tried to roast a pair in the oven without success. They were under-done and ended up in the garbage. Subsequently, we used the Waring deep-fryer to try again. Adapting several recipes we found on the web, we had a most successful experience.
Ingredients:
1/2 Cup Flour
1/4 t Salt
1/4 t Pepper
1/4 t Garlic Powder
1 Cornish Hen per person
Procedures:
In a Ziploc bag, put the flour, salt, pepper and garlic powder.
Put each hen in the bag and coat with the mixture.
Arrange two hens in the fryer basket side-by-side, breast side down.
Heat the oil to 375o. Fry for 10 minutes.
Invert the hens to breast side up. Allow the oil to return to 375o and fry another 10 minutes.
Use an instant-read thermometer to verify that the birds have reached an internal temperature of 185o.
Notes:
2014-03-28: We use a dutch oven and peanut oil. The oil was deep enough that the hens didn't have to be turned. The skin was crisp and this worked well.
2005-11-05: They provided an outstanding entrée. We coupled them with acorn squash for a good dinner.
