ROASTED CORNISH HENS  
Our local market carries fresh 1.75 lb Cornish hens from Perdue poultry. They can also be fried.
Ingredients:
1/2 Cup Flour
1/4 t Salt
1/4 t Pepper
1/4 t Garlic Powder
1 Cornish Hen per person
Procedures:
In a Ziploc bag, put the flour, salt, pepper and garlic powder.
Put each hen in the bag and coat with the mixture.
Roast at 375o for 60-70 minutes.
Use an instant-read thermometer to verify that the birds have reached an internal temperature of 185o.
Notes:
2012-12-15: Three hens were roasted, as Margaret joined us. Lyd put strips of bacon on the breasts which was good, but the skin didn't get crisp.
2005-11-05: They provided an outstanding entrée. We coupled them with acorn squash for a good dinner.
