PESTO-CRUSTED MAHI-MAHI  
This original recipe came from Southern Living Complete Quick and Easy Cookbook: 2009
Ingredients:
2 Tablespoons Pesto
1/2 cup fine dry breadcrumbs
1/2 cup grated Parmesan cheese
lemon juice
1/4 teaspoon pepper
4 (4 ounce) Mahi-Mahi fillets

Procedures:
Combine pesto, breadcrumbs, lemon juice and pepper in in a shallow dish. Dredge fillets in breadcrumb mixture, place in an 11 x 7 baking dish coated with cooking spray. Coat fillets with cooking spray. Bake at 400o for 15 minutes or until fish flakes with a fork
Notes:
2013-01-18: We did this with a tossed salad. With skin on the fish, it was necessary, on the plate, to separate the flesh from the skin.
2010-07-07: With no orange roughy, we switched to Mahi-Mahi.
