PARMESAN-MUSHROOM STUFFED MEATLOAF

Ingredients: |
2 T butter
8 oz mushrooms
1 shallot
1 garlic clove
1.5 lbs ground round
1/2 cup Italian breadcrumbs
1/4 Parmesan cheese, grated

1/4 cup 1/2 and 1/2
1 egg
1 t salt
1/4 t pepper
1/2 teaspoon Italian herbs
1.5 cups shredded Italian six-cheese blend
10.5 oz spagehtti sauce

Procedures: |
Preheat to 350o.
Sauté mushrooms, shallot, garlic and Italian Herbs for 5 minutes or until tender.
Gently stir together ground round and the next 6 ingredients and shape into a 10 x 14 rectangle on wax paper.
Top with mushroom mixture, cheese and tomatoes.
Roll-up, jelly-roll fashion, and place, seam side down, in a lightly greased 15 x 10 pan.
Bake at 350o for 1 hour or until center is no longer pink.
Brush with spaghetti sauce and let stand 10 minutes before slicing.
