Ingredients:
1 onion, diced
1 pound boneless pork, cubed
1 pack taco seasoning mix
1 tablespoon vegetable oil
1/4 cup peach preserves
8 oz mild salsa
EVOO
Hot Cooked Rice
Procedures:
Place pork in a large zip-top plastic freezer bag; add taco seasoning. Seal bag and shake to coat pork.
Sauté the onion in EVOO until soft/tender.
Heat oil in a large skillet over medium-high heat. Add pork, cook, stirring constantly, until browned on all sides.
Stir in preserves and salsa; cover, reduce heat, and simmer 15 minutes, stirring occasionally.
Notes:
2024-04-01: With no peach preserves, Lyd used apricot. Sauté the onion in oil, add meat and sauté, add 1/2 t Adobo. 1 can drained black beans, 1 t BTB chicken and 1 t mincedgarlic.
2021-03-25: An excellent batch using a full tenderloin. Next time, a can of black beans will beadded.
2020-02-22: We used a single pork tenderloin and served the entree over microwave rice with Broccoli Salad.
