PORK MEDALLIONS IN MUSTARD SAUCE

Ingredients: |
2 Tablespoons Vegetable oil
2 Tablespoons coarse-grained mustard
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
1.5 pound pork tenderloin
1 teaspoon pepper
Mustard Sauce

Procedures: |
- ___Stir together first 4 ingredients.
Rub mixture over pork, and place in a large zip-top plastic freezer bag.
Seal and chill 8 hours, rub pork evenly with 1 teaspoon pepper.
- ___Grill, covered with grill lid, over medium-high heat (350o - 400o) for 10 minutes; turn meat, and grill 15 more minutes or until a meat thermometer registers 155o.
Slice pork and serve with Mustard Sauce.
