PEPPER SHRIMP WITH RICE
 
Ingredients:
2 lbs Shrimp, Large
Fluffy white rice
16 oz. Canned Black Beans, drained
4 oz. Canned Chilis, mild, chopped
4 oz. Canned Pimentos, drained and chopped
1/4 Cup Fresh Parsley
1/4 t Red Pepper Flakes
1/2 t Garlic Powder
1/2 t Adobo Seasoning
3 T Butter
Procedures:
Arrange shrimp on broiler pan lined with aluminum foil.
Season the shrimp with garlic powder and Adobo seasoning.
Cook the Fluffy white rice.
Stir in beans, chilies and pimentos.
Add 3 T minced parsley.
Heat through.
Mix butter, ground pepper and 1 T parsley.
Brush shrimp with butter mix.
Bake at 400o for 15 minutes, basting with more sauce.
Plate the rice and shrimp, pouring any drippings over and serve.
