SALMON LOAF |

Ingredients: |
1 cup milk
3 eggs, slightly beaten
18 Saltine Crackers, finely crushed
1 cup finely chopped celery
3 7-ounce cans of salmon, drained
2 Tablespoons grated onion
1/4 teaspoon pepper
3/4 teaspoon salt
dill/parsley
Cucumber Sauce, Hot

Procedures: |
Preheat oven to 350.
In a large bowl, combine milk, eggs and cracks and let stand 5 minutes, stirring often.
Stir in celery, salmon, onion, pepper and salt.
Our salmon mixture into well greased 10" x 5" x 3" loaf pan. Bake for 1 hour or until knife inserted in center come out clean.
Set on rack to cool slightly.
With spatula, loosen edges of salmon loaf from pan and invert onto serving platter.
Pour Cucumber Sauce over the loaf and garnish with chopped dill or parsley.
Pass remaining sauce in a gravy boat.

2015-02-09: We created Baked Salmon Squares and a new Chilled Cucumber Sauce.
2012-12-19:
We sautéed the celery, onion and carrot in butter.
Meanwhile, the club crackers were rolled with a rolling pin.
These were combined with the egg and milk, 1 tablespoon of Worcestershire was added and the mixtures were combined.
The salmon was drained and folder into the combined mixture. It was then molded into a loaf, without the pan.
