Baked Salmon Squares |

Ingredients: |
1 cup 1/2 & 1/2
2 eggs, slightly beaten
1 cup Panko Bread Crumbs
1 cup finely chopped celery
1 can of red sock-eye salmon, drained
1 Tablespoon Soy Sauce
|
1 Tablespoon Horseradish Sauce
1 Tablespoons minced onion
1/4 teaspoon pepper
3/4 teaspoon salt
1 tablespoon dill
Chilled Cucumber Sauce

Procedures: |
Preheat oven to 350.
In a large bowl, combine milk, eggs and Panko and let stand 5 minutes, stirring often.
Stir in celery, salmon, onion, pepper and salt.
Pour salmon mixture into well greased 9" x 9" pan. Bake for 1/2 hour or until knife inserted in center comes out clean.
Set on rack to cool slightly.
With knife and spatula, cut into 2" squares.
Plate the squares and pour Chilled Cucumber Sauce over the squares and garnish with chopped dill or parsley.
Pass remaining sauce in a gravy boat.
This can be served warm, or chilled.

Notes: |
2023-07-29: Even though it was served with excellent chilled cucumber sauce, it just isn’t good enough to stay in our rotation.
2021-10-24: The ingredients in the right column were omitted, and the stacked squares were served with the cucumber sauce, Mac-n-cheese.
2021-05-19: Another deep-dish batch, served with V8 Aspic. Whereas the cucumber purchased for the sauce was consumed on Sunday’s movie event, we topped with Ranch dressing instead.
2020-03-22: Deep-dish, we had half and used the rest for lunch.
2018-01-06: we served the squares in a stack of three, cold, on a bed of the chilled cucumber sauce. Excellent!
