Baked Scallops  
Ingredients:
1 lb fresh sea scallops, gristle removed and patted dry
1 cup 1/2 & 1/2
Bacon??
2 T Extra Virgin Olive Oil (EVOO)
S&P
lemon juice
Procedures:
Marinate the scallops over night in the 1/2 & 1/2
Preheat the oven to 400o. Place the individual scallops on a baking sheet covered with aluminum foil.
Drizzle with EVOO and lemon juice
Bake for 25 minutes and garnish with freshly cracked pepper
Notes:
2024-05-20: With sweet potatoes, summer salad, and Angry Orchard ales.
2022-06-06: Served with stuffed squash.
2020-05-06: Baked, not broiled; with candied sweet potatoes and stuffed squash.
2018-08-17: LEW baked at 400 for 25 minutes instead of broiling and garnished with cracked black pepper; excellent. Next time we’ll wrap in bacon.
