Berbere Sauce
This is served at Jiko--The Cooking Place, in Disney's Animal Kingdom Lodge at Walt Disney World as a part of Berbere Braised Lamb Shanks
Ingredients:
1/4 cup peeled fresh ginger
2 tablespoons finely chopped garlic
1 jalapeno, seeded and finely chopped
1/4 cup canola oil
2 tablespoons tomato paste
2 tablespoons red wine vinegar
1/2 teaspoon ground cumin
1/4 teaspoon ground cardamom
1/4 teaspoon ground allspice
1/2 teaspoon coarse salt, plus more for seasoning
1/4 teaspoon freshly ground pepper, plus more for seasoning
Procedures:
1. Combine ginger, garlic, and jalapeno in the bowl of a food processor. Pulse until mixture is finely chopped, about 10 pulses.
2. Continue to pulse while adding canola oil.
3. Add the tomato paste and continue to pulse while adding the red wine vinegar.
4. Stir in cumin, cardamom, and allspice and season to taste with salt and pepper.
Cover and set aside.
Notes:
2020-12-05: To go with Berbere Braised Lamb Shanks .
2020-08-14: We deleted the cilantro, and, in the absence of allspice added dashes of cinnamon and cloves.
2017-10-30: We use the whole batch on 2 shanks.
2016-12-09: 1 cup with dinner and 1 cup to the freezer.
2015-01-18: Added to our cookbook for Berbere Braised Lamb Shanks .
