Berbere Braised Lamb Shanks
This is served at Jiko--The Cooking Place, in Disney's Animal Kingdom Lodge at Walt Disney World. This is the stovetop version. There is also an oven-baked version.
Ingredients:
4 lamb shanks, 1 pound each
1.5 teaspoons coarse salt
1 teaspoon freshly ground pepper
2 tablespoons EVOO
1/2 spanish onion, diced
6 plum tomatoes, cored and quartered
8 garlic cloves, peeled and halved
1 tablespoon flour
Berbere Sauce
Procedures:
Season lamb shanks with salt and pepper.
In a large Dutch oven, heat olive oil over medium-high heat. Add lamb shanks and brown on all sides. (May need to do this in two batches.)
Remove shanks from pan. Reserve pan and juices. Let lamb cool slightly and coat each shank with Berbere sauce and set aside.
In the same pan, add onion, tomatoes, and garlic cloves.
Cook over low heat, stirring occasionally, until the tomatoes have softened and the onions are translucent.
Add the flour and cook for 1 minute.
Add two cups of water to the pan and stir well to combine all ingredients.
Return lamb shanks to pan and spoon the tomato mixture over the top of the shanks.
Cover pan and cook for 3+ hours, until meat is very tender and beginning to fall off the bone.
To serve, place each shank on a plate and top with remaining sauce.
Notes:
2020-12-05: An excellent batch with 3 quarts to the freezer
2020-08-14: We made the decision to forgo the oven and did the entire procedure on the stove top. The ingredients remained the same but we will eliminate the mushrooms as they did not add anything to the product.
2017-10-30: two shanks were served over couscous with butternut squash.
2017-01-27: Two large shanks, with the bones removed before serving, accompanied by 4 bean salad.
2016-12-09: excellent, served with polenta.
